Acid-ash in food is a residue of the inorganic minerals which form acids in the body. These particles have the capacity of adding hydrogen ions to a liquid solution. An excess of hydrogen ions in a solution makes the solution acidic. It can be measured using urine tests – the more acidic the urine, the more acid-ash in the diet. (1, 2)
